Caramel Pear 🍐 Empanadas

Check The Vibes. Today is Throwback Thursday and we are returning to a delicious recipe. I made this recipe at the end of 2021 and it is still one of my favorites. I decided to post this today while we can still find pears in the stores, as we are approaching the end of the season.

When I made this recipe the first time, I used sweetened condensed coconut milk, but I have yet to find a good one that is not on Peta's bad list of suppliers. I have not tried this, but you should be able to swap the sweetened condensed coconut milk for brown rice syrup. If you try this recipe, let me know what you think.

Be Well my Friends

Caramel Sauce Ingredients

1 can (11-12oz) sweetened condensed coconut milk or replace with equivalent amount of brown rice syrup

1/4 cup oat milk (omit if using brown rice syrup)

Pear Filling Ingredients

3-4 peeled and chopped pears 🍐

1/2 cup brown sugar

2 Tbsp chopped pecans

1/4 tsp ground cinnamon

1/4 tsp ground nutmeg

1/2 cup water

2 Tbsp tapioca starch

1 pack of potsticker wrappers or wonton wrappers

Caramel Sauce Directions

Step 1. Cook sweetened condensed coconut milk for about 20 minutes on low. Gently stir every few minutes

Step 2. Allow the sauce to cool for about 2 minutes. Slowly stir in oat milk until combined and creamy

**If using brown rice syrup, omit the two steps above. Just drizzle the pockets with the syrup**

Pear 🍐 Filling Directions

Step 1. Peel and chop pears

Step 2. Add chopped pears, brown sugar, pecans, cinnamon, nutmeg, and water to a saucepan and cook for 12-14 minutes on medium heat until pears are tender. Stir frequently

Step 3. Add tapioca starch and stir. Cook for additional 1-2 minutes, until sauce thickens

Step 4. Fill wonton wrappers with pear filling and crimp edges. Deep fry or air fry until golden brown
