Sweet Potato Waffles
Ingredients:
1 cup of sweet potato puree
1 cup of flour
1/2 cup of cornstarch or arrowroot flour
3 tsp of baking powder
1 cup of plant milk
2 Tbsp of date sugar
2 Tbsp of avocado oil
1 tsp of cinnamon
Instructions:
Step 1: Clean one sweet potato and poke holes with a fork. Boil in hot water for 50 minutes to an hour or until you can easily poke the fork through the sweet potato.
Step 2: After boiling, add the sweet potato to a food processor and blend. Take one cup of the sweet potato puree and add it to a bowl.
Step 3: Add all the ingredients for the sweet potato waffle to the bowl. Stir until well combined.
Step 4: Add avocado oil to the waffle maker. Add the batter to the waffle maker and cook until you achieve your desired texture. My waffle maker takes about 12 minutes, but each waffle maker is different.
