Cream Filling (Bottom Layer)
1 cup of soaked cashews
1/2 cup of coconut cream
3 Tbsp of maple
3 Tbsp of melted extra virgin coconut oil
2 tsp Vanilla extract
Orange Filling (Second Layer)
1 cup + 2/3 cup of soaked cashews
1/2 cup of coconut cream
3 Tbsp maple
3 Tbsp melted extra virgin coconut oil
3 Tbsp of orange zest
3/4 cup orange juice (For more color, you can replace 3 TBSP of orange juice with carrot juice)
Crust
1 cup of deseeded dates
1 cup of walnuts
Topping
Orange Slices
Date Syrup (Optional)
Step 1. Deseed dates and blend with walnuts until you have a smooth paste—grease a 6-inch springform pan with oil. Add date crust to the bottom and use a spatula to even out.
Step 2. Add all the vanilla cream filling ingredients to a high-powered blender and blend until smooth. Add a second layer to the pan. Place in the refrigerator while making the next layer.
Step 3. Add all the ingredients for the orange filling to a blender and blend until smooth. Add to the pan and smooth out.
Step 4. Place in the freezer for 4 - 6 hours. When you are ready to enjoy it, please remove it from the freezer and allow it to chill for 15 minutes before enjoying it.
