Mango Rolls with Blue Butterfly Passion Fruit Sauce
Can you believe there are over 500 types of mangoes worldwide? Some say it’s even over 1500! I got mixed answers online regarding the number of varieties of mangos. Each is unique in size, color, texture, and flavor, from sweet and small to large and tangy. Various beautiful colors include yellows, vibrant oranges, and even hints of pink and green. MANGO ROLLS
BUTTERFLY PEA PASSION FRUIT ICING
Step 1
Add chopped mangoes, water, sweetened condensed coconut milk, coconut sugar, and cardamon to a small pot. Cook on low heat for 15-20 minutes, stirring frequently, until most of the water is cooked out (step 2 will thicken the filling further)
Step 2
Remove the pot from heat and add fresh chopped mint, the juice from 1 lime, and tapioca liquid. Stir well and allow to thicken. Set aside
Step 3
Preheat frying oil to 375 degrees Fahrenheit

To prepare your wonton wrappers, you will need a small bowl of water, a brush, and a flat surface.
Step 5
Add a heaping spoonful of mango filling to the corner of the wonton wrapper. Fold in the two side corners, then roll from the top (closest to you) to the bottom.

Fry in small batches
Step 7
Mix all ingredients for the icing. I use frozen passion fruit cubes. Let them melt and mix with the powdered sugar and butterfly pea flower. Lime juice is an alternative.
