Lemon Basil Skrimpz Sandwich

Whether you make these Lion's Mane Skrimpz alone or in a sandwich, you are in for a treat! Out of all of my Lion's Mane Skrimpz sauces, this one is up there in my top 3 favorites.


  • 4-6oz Lion's Mane mushroom
  • grapeseed oil for frying


  • 1 tsp minced garlic
  • 3 Tbsp olive oil
  • 20-22 basil leaves
  • 1 tsp lemon zest
  • 2 Tbsp lemon juice
  • 2 tsp brown sugar
  • 1 tsp red pepper flakes
  • 2 Tbsp vegan Worcestershire sauce
  • to taste salt & pepper


  • 1 cup flour
  • 1.5 cups water OR sparkling water
  • 2 Tbsp tapioca starch
  • 1 tsp granulated garlic
  • to taste salt & pepper


  • 1/2 cup flour
  • 1 cup panko bread crumbs
  • to taste salt & pepper
  • 1/2 tsp smoked paprika


  • hoagie rolls
  • vegan mayonnaise
  • sliced red bell pepper
  • sliced orange bell pepper
  • sliced cucumbers
  • lettuce


Step 1

Clean Lion's Mane mushroom with a brush, if needed, then pull apart the mushroom into shrimp-like sized pieces

Step 2

Finely chop or muddle basil leaves then mix together all ingredients for Lemon Basil sauce

Step 3

Mix together ingredients for wet batter

Step 4

Mix together ingredients for wet batter

Step 5

Dip Lion's Mane pieces into wet batter and then into dry batter 

Step 6

Deep fry, at 370 degrees Fahrenheit, until golden brown and crispy

Step 7

Toss Skrimpz with Lemon Basil sauce

Step 8

Build hoagie with preferred ingredients or eat these Skrimpz alone, for a crispy, quick snack. Enjoy!
