I made these for my granddaughter's birthday! I hope she and you enjoy them!
Dragon fruit Filling:
1/2 cup date sugar
1/4 cup of maple
1/2 tsp cardamon
1 cup of dragon fruit cubes melted
1/3 cup vegan butter
1/4 cup of water
Juice from 1 lime
T Tbsp of ground chia seeds
lime zest
Butterfly Pea Lemon Icing:
1/2 cup coconut cream
3 Tbsp of melted cacao butter
1 Tbsp of butterfly pea flour
Juice from 1/2 lime
3 Tbsp of light agave
1 Tbsp of coconut oil
You can also make butterfly pea lemon icing using powdered sugar, lemon, and butterfly pea powder.
Other ingredients:
Pastry Dough
Lemon zest
Shredded coconut
Step 1. Blend all the dragon fruit filling ingredients until you have a smooth texture.
Step 2. Roll out the dough into a large rectangle. Spread a thin layer of dragon fruit, filling the dough and leaving a small border around the edges. Starting from the long side, tightly roll the dough into a log. Use a sharp knife to cut the rolls into 18 pieces.
Step 3. Add a little oil to the baking pan and add the rolls to the pan. Bake for 50 -55 minutes at 350 degrees.
Step 4. Create your icing by mixing all the ingredients in a sauce pot and cooking on low for 5 minutes. Add to a container and refrigerate for 1 hour.
Step 5. Add icing and the remainder of the dragon fruit filling to the top of the rolls, along with lemon zest and coconut.
