My mom always told me, "Todd, make sure you eat all your beans." I wish she had been referring to these brownies. If you're looking to take your brownies to the next level, try this simple twist: substitute flour with black beans!
Ingredients:
1 x 15oz can low-sodium black beans
1/4 cup Almond flour
1/2 cup organic cocoa powder
1/2 cup coconut sugar
1/4 cup brown sugar
1 Tbsp avocado oil
2 Tbsp plant milk
1 tsp apple cider vinegar
1 tsp baking powder
1/2 tsp baking soda
2 flaxseed eggs
3/4 cup chocolate chips
Preheat oven to 360 degrees Fahrenheit
Instructions:
Step 1
Prepare the flaxseed eggs by combining 2 tablespoons of flaxseed meal with 6 tablespoons of water. Set aside for 10-15 minutes
Step 2
Rinse and drain the black beans and preheat oven to 360 degrees Fahrenheit
Step 3
Add black beans, almond flour, cocoa powder, coconut sugar, brown sugar, oil, plant milk, apple cider vinegar, baking powder, baking soda, and flaxseed eggs to a food processor and blend until smooth. Scrape and remove the blades from the food processor
Step 4
Add half of the chocolate chips to the brownie mix. Stir to combine. Add the mix to a parchment paper-lined 8x8 pan. Top with the rest of the chocolate chips
Step 5
Bake for 35 - 38 minutes at 360 degrees Fahrenheit (bake time for sea level). Allow brownies to cool in the pan, then enjoy!

Very tasty recipe and filling. I didn’t have all the ingredients so I subbed the almond flour with spelt, used maple syrup in place of coconut sugar, and fresh lime juice instead of apple cider vinegar. Turned out great!
