Vegan Cajun Scalloped Potatoes

Bake at 360 for 50 minutes

8-9 gold potatoes
1/4 cup vegan butter
1/4 cup flour
1 1/2 cups plant-based milk
1/2 cup of vegetable broth
1 Tbsp cajun seasoning
1/4 cup of chopped onions
1 tsp of minced garlic
1 tsp smoked paprika
1/4 cup of chopped red bell peppers
2 1/2 cups of vegan cheese
1 Tbsp of chopped parsley
garnish with parsley and crispy jalapeños.

Preheat oven to 360 Degrees

Step 1. Sauté chopped onions and garlic in oil or butter. Place in a bowl to the side.

Step 2. Create a roux with vegan butter and flour.

Step 3. Add plant-based milk and vegetable broth. Add sautéed onions, garlic, paprika, red bell peppers, and cajun seasoning.

Step 4. Clean and cut potatoes into small slices.

Step 5. Create a layer of potatoes, followed by cheese and sauce. Repeat. On the last layer, add parsley before baking.

Step 6. Bake for 40 minutes, covered. Baked for another 20 minutes with no cover.

Step 7. Add extra red bell peppers, grilled onions, parsley, and crispy jalapeños. Enjoy!
