Sweet Potato Shepherd's Pie

 

Sweet Potatoes & Yams Are Not the Same - Even though some grocery stores label them the same, they are entirely different root vegetables—yams look more like yucca root in texture. Honestly, I dont know if I have ever tried a yam. Anyway, let's get to this recipe.

Ingredients below 👇🏾

 

Filling:

1-2 Olive oil

1 cup of chopped onion

2 tsp fresh garlic chopped

2 cups of frozen mixed vegetable 

1 package of cooked plant-based grounds 

2 Tbsp tomato paste 

1/4 cup vegan Worcestershire sauce 

2 cups mushroom broth or vegetable broth 

2 Tbsp cassava flour or tapioca starch 

1 tsp chili powder 

1 stem of Fresh thyme 

salt & pepper to taste 

 

 

Mashed Potatoes:

3 -4 sweet potatoes 

3 TBSP vegan butter

1/2 cup plant milk

1 tsp paprika

1 tsp garlic 

Salt & Pepper to Taste

 

Garnish with parsley 

 

Preheat oven 400

 

Step 1.  Clean and peel sweet potatoes. Bring water to a boil and add sweet potatoes. Cook until they are soft. 45 -55 minutes

 

Step 2. Mash Sweet Potatoes and add vegan butter, plant milk, garlic, paprika, salt, and pepper,

 

Step 3. Satay garlic and onions. Add plant-based grounds and cook until brown. Add tomato paste, Worcestershire sauce, thyme, chili powder, salt, and pepper. Mix and cook for 2-3 minutes and add broth—Cook for 5 minutes. Add cassava flour and mix. 

 

Step 5. Add filling to cast iron or baking pan, followed by a layer of mashed sweet potatoes. 

 

Step 6. Bake in the oven for 44 -50 minutes or until the top browns.

 

Step 7. Garnish with parsley, and enjoy!
