Parsnip Sandwich with Roasted Red Bell Pepper Spread 

 

Roasted Red Pepper Feta Spread Ingredients:

1/2 cup vegan feta 

1/4 cup roasted red bell peppers 

 

Roasted Parsnip Ingredients:

2 large small parsnips cut into thin slices

2 TBSP olive oil

1 tsp garlic minced

1 tsp maple

1 tsp apple cider 

1/2 tsp smoked paprika

Salt & pepper to taste 

 

Other Ingredients:

Bread

Sliced yellow bell peppers

Fresh arugula

Vegan mayo 

 

Step 1. Cut parsnips thin and place them to the side.

 

Step 2. Mix olive oil, smoked paprika, garlic, maple, apple cider, salt, and pepper in a bowl. Mix with sliced parsnip and let it marinate while prepping your other ingredients. 

 

Step 3. Blend feta and roasted red bell pepper in a food processor until you have a creamy spread.

 

Step 4. Air Fry or grill for 3-4 minutes. You do not want to overcook. The goal is to keep it fresh and crispy. 😊 

 

Step 5. Build your sandwich and enjoy!
