I grew this Lion's Mane at home and made Crispy Country Fried Lion's Mane Steak Recipe!

In about 16 days, I cultivated a stunning Lion's Mane Mushroom at home, bringing back cherished memories of a classic dish I relished during my younger days. There are numerous methods to prepare Lion's Mane, and my preferred approach involves extracting all the water from the mushroom before progressing with my chosen recipe unless I'm making my signature Skrimpz.  Crispy Country Fried Lion's Mane Steak Recipe

Ingredients:

Mushroom Steaks:

  • Lion's Mane clusters, about 1.8-2.5 oz each

Marinade:

  • 3 Tbsp of coconut aminos
  • 2 Tbsp of olive oil
  • 1 tsp of minced onion
  • 1 tsp of parsley flakes

Wet Batter:

  • 1 1/2 cups of plant-based milk
  • 6 tbsp of vegan egg substitute
  • 1 cup of spelt flour or regular flour
  • 3 tsp of garlic powder
  • 2 tsp of onion powder
  • 2 tsp of ground paprika
  • 1/2 tsp of ground black pepper
  • 1/2 tsp of celery seeds
  • 1/2 tsp of turmeric
  • Salt to taste

Panko Mix:

  • 1 cup of Panko
  • 1 tsp of cayenne pepper
  • 1 tsp of garlic powder
  • 2 tsp of onion powder
  • 1 tsp of parsley flakes
  • Salt and pepper to taste

Gravy:

  • 1/4 cup of vegan butter
  • 1/4 cup of spelt flour or regular flour
  • 1 cup of vegetable broth
  • Salt & pepper to taste

Sides:

  • Mashed potatoes
  • Broccoli

Instructions:

  1. Clean Lion's Mane mushroom with a soft brush, if needed. Use clusters that are about 1.8-2.5 ounces in size.
  2. Add the clusters to a pan (preferably cast iron) and use a press or heavy pan to extract all the water from the mushroom on medium heat. No oil is needed in the pan for this step. Flip over the mushroom and repeat until no more water is released from the mushroom.
  3. In a bowl, combine all marinade ingredients. Marinate the pressed Lion's Mane steaks for 1-2 hours. The longer the mushrooms are allowed to marinate, the more flavor they absorb.
  4. Prepare the wet batter by combining the ingredients in a bowl.
  5. Prepare the Panko mix by combining the ingredients in a different bowl.
  6. Dip the Lion's Mane steaks into the wet batter and then into the Panko mix.
  7. Pan-fry the battered steaks in about 1/2 inch of cooking oil. Flip and cook until crispy. Set aside on a paper towel while preparing the gravy.
  8. Melt the vegan butter in a pot and create a roux by slowly whisking in the flour. Cook and whisk until the roux starts to bubble and brown slightly. Then whisk in the vegetable broth, salt, and pepper.
  9. Serve the crispy country-fried Lion's Mane Steaks with the gravy poured on top. Accompany with side dishes of your choice, such as mashed potatoes and broccoli. Enjoy!
