Forbidden Fried Black Rice with Jerk Tofu

You learn something new every day. As I was making this recipe, I wanted to research why they call black rice forbidden.🚫 Come to find out, it was said that black rice was reserved for the wealthy and upper class. This is why it was called forbidden. Black rice was forbidden to the everyday person. I dont know how true this story is, but it is interesting to learn. Anyway, I love black rice and the rich nutty flavor that comes with it.

Ingredients
3 cups Forbidden Rice
1/4 cup of chopped green bell pepper
1/4 cup of chopped red bell pepper
1/2 cup lima beans
1/4 cup coconut amino
1 batch of Firm Tofu
1 TBSP + 2 tsp refined coconut oil
2 Tsp minced garlic
1 Tsp fresh ginger
Salt & pepper to taste

Jerk Marinate
1/2 of Scotch Bonnet pepper
3 tbsp of coconut amino
1 tbsp + 2 tsp of jerk seasoning
2 Tsp of coconut oil
2 tsp lime
Salt & pepper to taste

Mango Cilantro Sauce
1 1/2 Tbsp of lime juice
1 chopped mango
1 hand full of cilantro
Salt & pepper to taste

1. Cut tofu into cubes
2. Blend scotch bonnet pepper, coconut amino, jerk seasoning, coconut oil, salt, and pepper in a blender. Marinate tofu cubes.
3. Grill Tofu cubes
4. Cook black rice and set to the side.
4. Sauté garlic and ginger in coconut oil.
5. Add red bell pepper, green bell pepper, and lima beans. Mix and cook. Add coconut amino and cook for 5-10 min in a wok or pan. Add tofu.
4. Blend lime juice, chopped mango, cilantro, salt, and pepper to create the sauce
