Creole Style Red Beans & Rice


4 x 15 oz of red beans

4 cups of vegetable broth

1/2 cup chopped onion

1/4 cup of chopped celery 

1/2 chopped green pepper

1 Tbsp oil

1 Tbsp Creole or cajun seasoning 

1/2 tsp cayenne pepper 

1 1/2 tsp of Italian seasoning

1 tsp smoked paprika 

Salt & Pepper to taste

1 pack of Vegan Chipotle Sausages

Cooked rice

Hot sauce 

Fresh thyme

 Step 1. Chopped sausages and sauté for 4-5 minutes on medium or until cooked.


Step 2. Remove sausages and saute onions, green peppers, and celery in the same pot with olive oil. 


Step 3. Add creole seasoning, Italian seasoning, smoked paprika, and cayenne pepper to the pan and cook for 2-3 minutes. Place to the side.


Step 4. Add red beans, bay leaf, thyme, and vegetable broth to another pot. Cook until it starts to boil. Smash the red beans with a smasher.


Step 5. Add sausages, onion, bell peppers, fresh thyme, and celery.


Step 6. Serve on top of cooked rice, and dont forget the hot sauce.
