¬†Chili Garlic Jackfruit Fried Rice ūüćö¬†‚Ā£


3 - 3 1/2 cups cooked rice ūüćö¬†

1 cup of mixed vegetables 

1/2 cup vegan eggs

1 TBSP sesame oil 

1/2 tsp fresh chopped ginger 

2 - 3 TBSP soy sauce (flavor to taste)


Sweet Chili Jerk Jackfruit 


20 oz green jackfruit 

3 TBSP sweet chili 

2 TBSP oil 

1 TBSP brown sugar

2 tsp rice cider vinegar 

1/3 cup soy sauce

Salt & pepper to taste 


Sriracha Mayo Sauce


3/4 cup vegan mayo 

1/4 cup sriracha 

1 TBSP chili oil 


Top with crispy chilies and green onions or toppings of choice.


Step 1. Scramble vegan eggs and set them to the side. (Optional)


Step 2. Add brown sugar, rice vinegar, soy sauce, 1 tbsp tapioca flour, oil, sweet chili, and salt & pepper to a bowl and blend.


Step 3. Break down the Green Jackfruit into pieces that resemble shredded meat. Remove any seeds that may remain. Marinate the Jackfruit in sweet chili for at least 1 hour


Step 4. Oil and heat saute pan to med-high heat and add marinated Jackfruit to the pan and cook for 8-10 minutes, or until browned. Set to the side.


Step 5. Sauté garlic and ginger in sesame oil. 


Step 6. Add rice, mixed vegetables, vegan eggs, and soy sauce to the pan. Mix and cook for 5-10 minutes. Add Jackfruit last.


Step 7. Mix sriracha and vegan mayo together for your sauce. 


5. Garnish with green onions, sesame seeds, and sriracha mayo sauce
