Black Eyed Peas & Greens
w/ Chicken of the Woods
Check the vibes! This Black Eyed Pea recipe was a collaboration with my mom last year. Straight fire. This time I made it with Chicken of the Woods instead of chipotle vegan sausages. I am proud of how it came out. The Chicken of the Woods texture was not as chewy as the vegan sausages and had just as much flavor. I smoked the Chicken of the Woods to add that smokey chipotle flavor. If you can't find Chicken of the Woods, this recipe works perfectly with vegan chipotle sausages.

Black Eyed Peas & Greens Recipe
1 pound bag black eyed peas
1 bunch chopped collard greens
8oz Chicken of the Woods mushroom, smoked OR vegan chipotle sausage
8oz vegan cream cheese
1/2 TBSP creole seasoning
2 tsp grapeseed oil OR oil of choice
1/2 red onion, chopped
1 TBSP chopped garlic
6 cups vegetable broth
2 -3 drops liquid smoke
1 chopped green bell pepper
Crispy jalapeños (optional)
Chipotle Marinade
1 cup chipotle peppers in adobo sauce
1 bulb garlic, smoked OR grilled
1/2 half red onion, smoked
1/2 tsp cumin
1 tsp paprika
1/2 TBSP apple cider vinegar
1 tsp Italian seasoning
1 TBSP grapeseed oil
1/2 cup veggie broth
Salt & pepper to taste
Step 1. Prep and clean black eyed peas. Soak overnight.
Step 2. Sauté onions, green peppers, and garlic.
Step 3. Add black-eyed peas, vegetable broth, collard greens, liquid smoke, cream cheese, and creole seasoning to the saute pan. Cook until beans are tender. It takes about 45 to 60 minutes.
Step 4. Smoke Chicken of the Woods or cook chipotle sausages. Chop into smaller pieces.
Step 5. Blend chipotle marinade ingredients. Marinate smoked Chicken of the Woods. Cook on medium heat in a pan until lightly browned.
Step 6. Add Chicken of the Woods or cooked chipotle sausages to black eyed peas.
Step 7. Serve with crispy jalapeños on top.
